Rimiro is named after the hill where a group of small-holder coffee producing families live and grow. In the local language of Kirundi, Rimiro translates to “where we cultivate” as this area has always been a place of farming. Rimiro Hill also has its own washing station where these growers can sell their freshly picked coffee cherries for further processing. The washing station is set up with fermentation tanks for processing, floating tanks to remove less dense cherries, as well as 275 drying tables so the coffee cherries can be spread out in the sun to dry. We find this coffee to be very balanced and soft, with blackberry and grape-like notes alongside a limey citrus, chocolate comes out on the cool down, and when very cool, we find a soft acidity and smooth finish.
