Mexico Puebla Consuelo Ortuño, 12oz
We’ve been working hard to find the perfect coffee from Mexico. Working closely with Red Fox Coffee Merchants, a coffee importer who has a direct focus on Mexico as an origin, this beautiful coffee from producer Consuelo Ortuño is finally here.
Located in San Juan Rio Bravo, a small community in the Northeastern Sierra of Puebla, Consuelo inherited her farm, Talix, from her father. Working together with her family in this very remote region of Mexico, Talix grows exceptional coffee. Many people from this part of Mexico have deep Nahuatl roots, and the community is located next to the highest mountain in the Northeastern Sierra, Cozoltépetl (from the Nahuatl name for Cózolt, the god of wind). Due to it’s remote location, this area is without access roads, so the family transports the coffee on horseback.
Talix occupies 3 hectares of land that is a former volcanic area, and is planted with Garnica and Marsellesa varieties. These two hybrids of coffee plants were developed in Mexico for their resistance to coffee leaf rust, and for their ability to grow high quality coffees in close proximity to each other. Consuelo also uses the native leguminous ice cream bean trees for both shade and nitrogen retention.
This very northern part of Puebla is part of a very special micro-climate, where the coffees ripen slightly later, and Consuelo’s coffee is shade-grown in a cool and lush tropical forest, creating a unique profile not common in other parts of Mexico.
This exceptional coffee is a fully washed offering. De-pulped after being floated in water to remove any less dense beans, it is then fermented in cement tanks for up to 40 hours. Next up, the coffee - while still in its parchment layer - is laid out to dry on patios and raised beds that were provided by the State of Puebla in an effort to support it’s coffee producers. Lastly, at the dry mill, the parchment layer is husked off and the coffee is prepped for export.
