Colombia Aponte Honey
Colombia Aponte Honey is grown high in Nariño and roasted light to let the honey process shine. Expect tart raspberry and green apple up front, then caramel and cocoa nib as it cools.
Aponte is a region inside the department of Nariño, well known for producing stellar honey processed coffees. Up at 1,700 to 2,100 meters, the air stays cool and the temperatures hold steady all year, and a crisp wind almost always blows through. That’s the perfect setup for drying coffee evenly, and it gives these honey processed coffees a clean, crisp acidity that’s unique to the region. Mixed Colombian varieties. We’re keeping this roast on the lighter side of a medium to let the processing shine.
