This natural processed micro-lot from producer Danilo Salazar checks all the boxes. Sweet, clean, jammy, floral, juicy, kind of wild, and super fun!

Danilo Salazar has spent over half his life perfecting growing and processing techniques. Together with his son, Pablo Andrés, the pair produces coffee on their 30 acre farm in Costa Rica’s Alajuela Province. They also own their own micro-mill here, allowing them the time to perfect their processing techniques. This micro-lot is made up of the catuai and caturra varietals - two types of coffee plant that are common in Central America. Catuai is known for it balanced profile and high productivity, caturra for its brighter citrus like profile.

The duo processed this micro-lot as a natural, being left to dry in the fruit on patios and raised beds. This traditional method produces a well balanced fruit forward cup, and uses much less water than fully washed processing methods. These are our favorite kinds of naturals - sweet and juicy without any hint of fermentation. It all comes down to the processing, and you can really taste the care that was put into this one.
