Danilo Salazar has spent over half his life perfecting growing and processing techniques. Together with his son, Pablo Andrés, he grows coffee on their 30-acre farm in Costa Rica's Alajuela Province. They own their own micro-mill, which gives them the time to really dial in their process. This lot was processed as a natural. drying the fruit on patios and raised beds - a traditional method that uses far less water than washed processing and produces a well-balanced, fruit-forward cup. They grow Catuai and Caturra varietals here at 1,700 masl.
These are some of our favorite kinds of naturals: sweet and juicy, without any hint of fermentation. It comes down to the processing, and you can really taste the care that went into this one.
In the bag: Net Weight 12oz (340g) of locally roasted coffee.
In the cup: Cherry cola, pastry, fruit punch, and cream. Natural process, crisp acidity, full body.
Plain talk: Like a fizzy cherry soda crossed with a pastry — sweet, fruity, a little indulgent. Great black, great over ice.
This one tastes like a treat, any time of day.
